When it comes to math I have found that most people who have trouble with math have simply missed some fundamental along the way. It is extremely rewarding to figure out what that is and fill in that hole. I teach by breaking problems down and asking easier questions that lead to the answer. This is in direct response to the "sink or swim" curriculum I encountered throughout my own academic career.
