For writing, usually I conduct some exercises. The level of the critique and what to say depends heavily on the age of the student. For grammar, I would either find or create my own practice materials and we could go over whatever is necessary until I've decided that the student is making improvements or the student has succeeded. Because I enjoy and see the wonder in science and I like to show that to students.
