Assuming that most students would rather be anywhere than an English class, I listen to their interests of the moment and then relate them to my goals. I explore their previous knowledge and build on that, avoiding either boring them or talking over their heads. I listen, we laugh, and then I reel them in, constantly showing them how my goals are relevant to their ultimate desires.
