I have also done some substitute teaching in elementary and high school levels. My experience is in food service and have dealt with many walks of life. I am a very committed member of Lincoln Kiwanis International as well as a member of the Central United Methodist Church. Most important topics and topics not well understood get time and individualized priority. Offer a challenge test at the end. Harder than the test students will face but no so hard as to lower self steem.
