As a writing emphasis major, I chose writing classes that focused on the principles of teaching writing and reading in a classroom setting. Positive reinforcement is the key. When a student sees that an adult is taking an honest interest in them, then they are not only more willing to learn, but more able. Telling a child "I know you can do it" instead of "you can do better than that" is imperative. Even the most tempermental or unmotivated student can be helped as long as that personal connection is there. I have always found that boosting their self-confidence, and thus reducing their stress/frustration level can work wonders.
