I have found that having the student talk through the subject matter can be useful in determining his/her strengths and level of understanding. I have also found that it is useful to go over any previous quizzes or tests related to the current subject matter as difficulties are sometimes related to previous work because with these subjects the work tends to build upon itself. I have noticed a couple things in my years tutoring people in math.
