For paper writing, I would have the student brainstorm some ideas, and then together we could discuss the pro's and con's of the topic and organization choice, and provide tips on how we could better the assignment. I am willing to give as much or as little help as a parent would prefer, as good grades are one goal but the students mastery of the material is the most important.
